Apples and Cream
Ingredients :

5 large apples,
200gr flour,
2 eggs,
3 glasses of milk,
half a glass rum,
40gr caster sugar,
1 grated lemon peel,
100gr butter for frying,
1 sachet of vanilla sugar or cocoa or cinnamon powder

Method :

Core and peel the apples, then slice them into pieces which are not too thin. Place the apples slices on a large plate and soak them in the rhum. Leave to one side for 10 mins. Now start making the cream. Mix the eggs and the sugar. When the the mixture is of a creamy texture, fold in the flour and the lemon gratings. In a bowl bring the milk to the boil. Add the eggy lemon mixture and stir together until boiling point is again reached. When the mixture is noticeably soft but not too thick or thin, let it cool and then transfer it to the fridge. Heat up the butter in a pan. When the butter is bubbly, pass each apple slice through the cold cream and then fry it. Take care not to loose the cream when the slices are turned over. Remove and sprinkle the vanilla, cocoa or cinnamon onto each slice according to taste. The apple slices make an obvious dessert, but are also fantastic when accompanying a roast pork dish.
